Seiringberjalannya waktu, V60 Dripper tetap menjadi prototipe, sampai perusahaan memutuskan untuk meninjau kembali desainnya pada tahun 2004. Nama V60 Dripper sendiri diambil dari sudut 60 derajat yang diciptakan oleh bentuk kerucut. Dominasi V60 di Industri Kopi. Perubahan desain yang diterapkan pada V60 memberinya dua keunggulan berbeda.
Menyeduh kopi atau mengekstraksi kopi bisa dilakukan dengan berbagai cara. Cara yang paling mudah bisa langsung menyiram air pada kopi yang sudah dimasukkan kedalam gelas. Akan tetapi, untuk mengoptimalkan citarasa dari sebuah kopi, ada beberapa jenis ektraksi yang biasa dipakai untuk menyeduh kopi. Kali ini kami akan sharing tentang jenis atau cara yang biasa dilakukan dalam ekstraksi kopi. Sebenarnya jenis-jenis ekstraksi ini juga bisa dilakukan pada saat mengekstraksi bahan-bahan lain, tidak hanya pada kopi, misalnya pada saat membuat santan yang merupakan ekstraksi dari buah kelapa. Akan tetapi kali ini kami akan sharing tentang jenis ekstraksi pada kopi, bukan ekstraksi pada kelapa hehe. Immersion atau Rendam Immersion adalah metode pelarutan/ekstraksi kopi dengan cara merendamnya dengan air saja sehingga terjadi kontak penuh sepanjang proses penyeduhan. Immersion atau rendam adalah metode paling tua dalam mengekstraksi kopi, kalau di Indonesia disebutnya Tubruk. Metode ini termasuk cara paling sederhana untuk menikmati secangkir kopi karena kita hanya membutuhkan air panas dan bubuk kopi. Secara umum dari karakteristik rasa yang didapat dari metode ini akan cenderung lebih strong dan berisi round body. Selain tubruk, ada juga beberapa alat seduh manual yang menggunakan metode immersion, seperti frenchpress dan clever dripper. Menyeduh dengan aeropress secara inverted juga menggunakan immersion loh sebelum dibalik dan dipress. Dengan mengetahui metode yang digunakan saat ekstraksi, kita akan lebih mudah dalam mengulik variabel yang lain . Perkolasi Perkolasi adalah teknik membuat larutan dengan cara mengalirkan pelarut, dalam hal ini air, melewati zat zat yang akan dilarutkan, yaitu kopi sehingga menghasilkan sebuah larutan kopi. Mudahnya seperti ini, pada teknik perkolasi, air dialirkan melalui kopi yang sudah digiling. Perkolasi biasa ditemukan pada alat seduh pour over maupun drip, salah satunya seperti alat seduh pada foto diatas, koka dripper namanya. Koka dripper ini salah satu alat yang cukup unik, karena bisa menggunakan tiga jenis kertas filter, filter V60, flat bottom, dan juga wave dripper tentunya dengan hasil seduhan yang berbeda. Hario V60, Chemex, Kalita, Kono, dan dripper-dripper lainnya juga menggunakan teknik perkolasi dalam mengekstraksi kopi. Espresso pun juga sama, hanya saja ditambahkan tekanan atau pressure untuk membantu melarutkan zat-zat yang ada pada kopi. Dekoksi Dekoksi merupakan salah satu teknik ekstraksi yang jarang ditemui dalam menyeduh kopi. Dekoksi sendiri mempunyai beberapa macam pengertian yang berbeda, ada yang mengatakan dekoksi sama dengan immersion akan tetapi diikuti dengan kenaikan suhu, ada juga yang mengatakan dekoksi adalah ekstraksi yang menggunakan tekanan. Mimin menemukan sebuah buku karya Harborne terbitan tahun 1973, dengan judul phytochemical methods, dimana dalam buku tersebut menjelaskan tentang arti dekok, yaitu ekstraksi dengan pelarutan air pada temperatur 90C selama 30 menit. Penguapan ekstrak larutan dilakukan dengan penguap berpusing dengan pengurangan tekanan, yaitu rotary evaporator sehingga diperoleh ekstrak yang kental. Dengan berbagai macam pengertian tersebut cara seduh yang masuk kedalamnya antara lain Turkish, mokapot dan juga shyphon. Well, tehnik seduh manual masih akan terus berevolusi. Hal ini bisa dilihat dari semakin beragamnya alat seduh dan cara seduh yang berkembang diantara para penikmat kopi. Jenis atau cara ekstraksi kopi yang kami sebutkan diatas hanya beberapa saja, masih banyak lagi alat-alat dan tentunya teknik yang lain. Hal inilah yang membuat kami semakin jatuh cinta dengan kopi, semakin diulik malah semakin cinta. Flavour & performance which must be a driver of flavour, so essentially the same thing are comparable when dialled in. V60 is perhaps easier to troubleshoot, as grind size & pour rate can be dialled in. Clever has a huge range of grind & steep time, with dead spots in the mid range of extraction I tend to use very fine grinds & 20min+ steep, or coarse grinds with a 1 min steep & updosed. Fast Clever brews may well use higher doses for equivalent V60 brew sizes, long Clever steeps same ratio as V60. Clever doesn't need a gooseneck kettle, which is strongly advised for V60, so pouring regime is simpler with Clever . There are some sellers providing pastel colours baby blue, yellow non-translucent, and that's slightly better. The V60 provides me with a cup that has a little more concentrated flavour and body that I like. And I can get this with around 14g to 220g water in. The clever by comparison is lighter in body but still tastes really really good. The V60 takes me less time, so I do this one if I get up before the kid as I can be done in 5 minutes and sat with a nice cup of coffee on my own for a few minutes before the chaos. If he's already awake I accept I've lost and use the clever and steep for longer. I am finding I need more like 16-18g in the clever to around 240g of water to get the flavour I liked. I can't be bothered to wait for 40 minutes to steep. I maxed at 20minutes and the coffee produced was naff. I tend to do 18g in 240g water, quite a fine grind, 2 minute steep and drawdown. Brazils are typically not very soluble, not sure I'd grind coarser for a long steep. My long steeps use the finest grinds I use for manual brewing. Basically, you're not going to be able to push the envelope extraction-wise, whatever the time. Long steeps get into the ball-park with fine grinds.
